What You’ll Need
· 2–3 lbs Miami ribs
· 473 mL Muskoka Brewery Mad Tom West Coast IPA
· 3–4 cloves garlic, roughly chopped
· 1 shallot, roughly chopped
· 2 tbsp fresh rosemary, roughly chopped
· 1 tbsp fresh thyme
· ½ tsp salt
· ½ tsp black pepper
Let’s Get Grilling!
1. Place ribs, IPA, garlic, shallot, rosemary, thyme, salt, and pepper in a large resealable bag.
2. Seal and refrigerate for 4–6 hours, turning occasionally to ensure even marination.
3. Preheat grill to 400–450°F.
4. Remove ribs from the marinade and discard the liquid.
5. Grill ribs for 2–3 minutes per side until nicely charred.
6. Slice into individual pieces or serve whole.
