Ingredients
For the crust:
- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened shredded coconut
- 2 tablespoons granulated sugar
- 1 pinch fine salt
- ½ cup unsalted butter, melted
For the filling:
- 2 large eggs
- 3 large egg yolks
- ½ cup granulated sugar
- ½ cup coconut milk
- ¼ cup freshly squeezed lime juice
- ⅓ cup unsalted butter, cubed
- 1 teaspoon lime zest
- 2 cups freshly whipped cream, divided
- Sliced lime, to garnish
Directions
For the crust:
- In a medium mixing bowl add the graham cracker crumbs, coconut, sugar, salt & butter. Stir until well combined.
- Evenly divide the crumbs amongst 6 small weck or mason jars. Press down to shape & firm. Refrigerate while you prepare the filling.
For the filling:
- In a heat resistant mixing bowl whisk together the eggs, egg yolks, sugar, coconut milk & lime juice until well combined.
- Place over a double broiler & continuously whisk until mixture begins to thicken, about 10 to 15 minutes.
- Once mixture thickens, whisk in the cubed butter & remove from heat. Add the lime zest. Cover with plastic wrap & let cool to room temperature.
- Once cooled, fold in 1 cup of whipped cream. Evenly divide mixture amongst the 6 prepared jars. Top with remaining whip cream. Garnish with lime slice & refrigerate until ready to serve!
