Executive Chef Rory Golden at Deerhurst knows that beer is making culinary headlines as craft beer fans discover the pairing power at dinner time (or anytime you’re enjoying a fresh one). We worked together to bring you this seasonal menu that Ventures Off the Beaten Path with four different beer-infused dishes. Harvest Ale Ontario Five Onion Soup
Our Harvest Ale is made with 100% Ontario ingredients, offering a soft biscuit malt with grassy notes and sharp kick of hop bitterness that cuts beautifully through the salty tang of assorted onions.
This year, we worked with Tavistock Hops, Canada Malting, Barn Owl Malt, and Escarpment labs to create our Ontario brew. Not only does Harvest Ale contribute to the savoury soups of the world, but it supports over 250 jobs in Ontario!
Mad Tom Braised Beef
Sitting pretty atop a scoop potatoes au gratin, this beef has been braised in a rich Mad Tom beer sauce. The beer gets cooked up with all the seasonings and autumn veggies that tops this dish before the seared meat is placed in the sauce and cooked through in the oven. Mad Tom would be proud!

Muskoka Craft Lager Supreme of Chicken
Filled with sun-dried cranberries and brie, the chicken is brushed with a Craft Lager gastrique glaze and accompanied by roasted potatoes and fresh vegetables. Pair it with Craft Lager (as these menu items pair perfectly with their infused brews), or try a Detour if you like a splash of citrus with your chicken.
Those cranberries we mentioned are grown in Johnston’s Cranberry Marsh in Bala, Muskoka, where we also source the best cranberries for our Winter Beard stout. Open year-round for tours, watch out for Johnston’s ice skating trail this winter.
Shinnicked Stout Coffee Crème Brulee
Save room for dessert and crack into this classic crème brule with a reduction of our Shinnicked Stout. Where does the coffee come in to play? Our award-winning stout is made with coffee from another local partner, Muskoka Roastery. We use their Lumberjack blend in our beer and it has a dedicated place in our coffee mugs (and hearts) around the office.
